Grasshopper Mint Cookies

 

These are a hit at our house.....and they are easy peasy!

Grasshopper Mint Cookies:

For the cookie part:
1 Devil's food cake mix (un made)
1/2 C. Oil
2 Large eggs.
1/2 tsp. Peppermint flavoring
Mix ingredients together and drop spoonfuls onto baking sheet.  Bake at 350 for 7-8 minutes.

While baking prepare the frosting:

1/2 c. butter, softened

2 Tablespoons milk

2 c. powdered sugar

1 1/2 tsp. peppermint extract

Green food coloring

 

Mix together all the ingredients, spread on top of cookies once they are cooled.

 

Finally make the chocolate topping:

1 bag of semi-sweet chocolate chips

3/4 c. butter

or

1 bag of milk chocolate chips

Melt chocolate chips and butter together in the microwave....I usually microwave 1 min, and then take to 30 second intervals.  Make sure you stir each time, and do not over cook!

Drop a little on each cookie and spread on!
