Sweet Lemonade:
(Pampered Chef Recipe)
2 Sliced up Lemons
1 Cup of Sugar
Tortilla Wraps:
(We had these at me and Phil's wedding)
1 package of cream cheese softened to room temperature
1/3 package of ranch seasoning
Mix together
Put a line down the middle of a tortilla shell
Layer Olives, Sliced up tomatoes, Shredded Lettuce, Sliced Cheese and lunch meat. Roll up tortilla and put a little more of ranch cream cheese mixture along the edge to seal up tortilla. (Me and Phil will eat a tortilla for lunch like this) but if you are having a little get together cut into 2 in slices and secure with a toothpick.
Carrot-Orange Cookies

My sister in law made these once for a family get together and they are divine...
1 1/2 cups white sugar
1 1/2 cups butter
2 whole eggs
2 cups mashed cooked carrots
4 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 teaspoons vanilla extract
3 teaspoons orange extract, divided
2 1/2 cups powdered sugar
1/4 cup butter (softened)
4 Tablespoons milk
orange food coloring
Directions
Preheat oven to 375 degrees and line a cookie sheet with parchment paper. Cream sugar, butter, and eggs. Add cooled carrots and mix well. Add the flour, baking powder, and salt. Mix well.
Add the vanilla extract and 2 teaspoons of the orange extract. Mix well. Bake for 10-12 minutes. Do not over bake. Remove from cookie sheet and let cool on a wire rack. For the Frosting: Cream powdered sugar, butter, and milk. You may just want to start with 3 Tablespoons of milk and add more if you need it. Add the remaining 1 teaspoon orange extract and orange food coloring to the desired color. Mix well. Frost cooled cookies~Creamy Mints
5 tablespoons reduced fat cream cheese, softened
1/4 teaspoon mint extract
food coloring (optional) - I used a couple drops of red to get the pink color
4 to 4 1/2 cups of Powdered Sugar
1-2 TBSP of Water if needed
Directions: Beat the cream cheese until soft, and fluffy, around 2 to 3 minutes. Add the mint extract and food coloring (if desired) Mix until blended. Add the powdered sugar about 1/2 cup at a time until it forms a stiff mixture. Add water if needed. Form balls with about 1/2 tsp. of mixture, flatten with your thumb or tines of a fork. Store in a airtight container in the refrigerator.
Peanut Butter Cookies with Hugs
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 Bag of Hershey's Hugs unwrapped
Food Coloring if desired
1 Beat the butter until creamy, 2 minutes. Add Sugars and beat for 2 more minutes. Mix in the Peanut butter and egg. In a separate bowl mix together the dry ingredients. Stir the dry ingredients into the other mixture.
2 Wrap dough in plastic and refrigerate at least 3 hours.
3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
For chewier cookies, bake at 300°F for 15 minutes.
