Southwest Skillet Dinner

We had this for dinner last night! It was delish and super easy!

Southwest Skillet Dinner

1 Tbsp. Olive Oil
1-2 Cups Cubed Chicken (cooked and seasoned with salt/pepper or Mrs. Dash)
1 Cup Broccoli
1 Red Bell Pepper (Cut up)
1/2 Onion (cut up)
1 Can Black Beans (Rinsed off)
1 Cup Salsa
1 Cup Cheddar Cheese
1 Tortilla

Heat up your skillet with Olive Oil, add Broccoli, Red Pepper, Onion allow to cook until soft. While you are doing that take your tortilla shell and cut into 1x2 pieces and place in oven at 425 for 4-6 minutes. Add your chicken, beans, salsa, to the skillet simmer on the stove top till thoroughly warmed, add tortilla pieces and sprinkle with cheese.
